It's Andy Paulson's birthday today! Unfortunately he has to work! We went to Oaks Park on Saturday instead and had such a nice time. The weather was absolutely perfect — I think every other memory I have of Oaks Park is scorching hot, so this was so nice. It's an old-fashioned amusement park and it is a lot of fun, especially with little kids. It's one of Andy's favorite places. I love it, too. Happy birthday, my dearest love. I hope this year is filled with so much joy.

We've been busy doing I don't even know what, just cruising into the end of the year and doing all of the end-of-the-year things, carnivals and dance performances and final swimming lessons, etc. Andy and I were trying to make our favorite honey-chipotle chicken tacos in the slow cooker; it had been plugged in for about an hour when we realized it wasn't getting hot at all. It was a very old slow cooker and we didn't even try to diagnose it. Those things make me nervous to begin with. So on the way to pick up Meems from school we stopped at Target intending to get a new slow cooker. We came home with an Instant Pot instead. I honestly hadn't even considered getting one, but we saw that it had a slow cooker setting in addition to the pressure cooker feature and so we grabbed it. Late to the trend, as usual, but we're making up for it with a) a ridiculous amount of enthusiasm and b) five Instant Pot meals in about six days. We made the tacos, as well as this jambalaya, Indian butter shrimp, coconut curry chicken, and the lemon–poppy seed breakfast cake (which I turned into Andy's birthday cake) from this book. I was not a big fan of the cake as a birthday cake. It was kind of like a steamed bun. It would have been great for breakfast! Ha. It sure was cute when it came out though.

I love the happy photos of the fairground. A few years ago, I bought a bread machine after you posted that you had just bought one. I tried a few different loaves in the machine and they were ok. Then I spotted a recipe that came with the bread machine called milk bread and I've never looked back. Our household has a fairly constant need for bread for sandwiches, toast, breadcrumbs, puddings etc and this milk bread from the bread machine is fabulous for all of these.I reckon I use my bread machine five or six time a week.
So I'm intrigued by your new instapot purchase and I am going to do some research to see if it could be as useful for me as the bread machine. Many thanks as ever Alicia for your lovely thought provoking, funny and informative posts.

If you guys eat a lot of yogurt, IP cold start yogurt using Fairlife milk is super. Low sugar, high protein and such a good clean taste.

Lovely photos! Happy Birthday to Andy, and I cannot believe how grown up your daughter is looking. You have such a lovely family.

We bought an Instant Pot last year and have been amazed at how useful it is. Lately I've been making cold start yogurt from this recipe: https://thisoldgal.com/instant-pot-no-boil-yogurt/ - since it's not made under pressure I bought the glass lid from Amazon. Super easy and the results are delicious. Plus it's a huge $$ saving! Have fun with it.

I love to come to your blog for all the recipes...that I'll never make! I am a terrible cook, I have no patience at all, and I am so envious of people who can cook so much as you do. Maybe one day...

Any tips on the slow cooker honey-chipotle chicken? I tried it this past weekend and the flavor was great but the sauce was so very runny. I think it was just the water/fat from the chicken but definitely a bummer!
